To assists the Restaurant Manager in directing and organizing the IRD restaurant staff. To ensure, first class service, food & beverage offerings and marketing to maximize profits and guest satisfaction.

 

Key Duties and Responsibilities:

  • Assist the Restaurant Manager IRD in Interviewing, selecting, training, supervising, counseling and disciplining outlet staff.
  • Responsible for all departmental induction training and on the job training of new members of staff and also newly promoted staff
  • Supervising the floor during operational periods to ensure that the Restaurant IRD standards and steps of service are met through all guests interactions.
  • Ensuring that checklists, requisitions and proper opening and closing functions are being completed each shift.
  • Requisition  to be done through the hotel requisition system.
  • To attend daily briefing (line up)  and communicate important events/ information to all employees
  • Assist the Restaurant Manager IRD in conducting appraisals
  • To ensure safety of the working environment and in the outlet’s environment is maintained
  • To take a keen interest in business situation and to bring in sound ideas to increase profit, reduce expenses, up selling , and maximizing guests spent where possible.
  • Communicate effectively, both verbally and in writing, to provide clear direction to the staff.
  • Observe performance and encourage improvement where necessary.
  • Ensure staffing levels are accurate based on hotel and outlet business levels.
  • Organize and conduct pre-shift and departmental meetings communicating pertinent information to the staff, such as house count and menu changes.
  • Communicate with guests and employees using a positive and clear speaking voice, listen to and understand requests, respond with appropriate actions and provide accurate information.
  • Remain calm and alert, especially during emergency situation and/or heavy hotel activity, serving as a role model for the staff and other hotel employees.
  • Ensure basic standard operating procedures are in place and are in compliance with Mauritian Laws, SGS, Kerzner International and LQA.
  • Ensure that all pantries are cleared of IRD soiled opex on a regular basis
  • Replenishing of all room minibars, cleanliness and ensuring that all billing are done  accurately
  • Ensuring that all steps of services as outlines in training materials are being followed on a daily basis.
  • Interact positively with customers by promoting and cross selling hotel facilities and services.
  • Resolve problems to the satisfaction of involved parties.
  • Answer telephones in a clear voice, coordinate and document  all important issues
  • Organize and manage special events in the restaurant IRD such as private dinners
  • Maintain rapport with all departments and attend relevant meetings when required.
  • Move throughout the facility and kitchen areas to visually monitor and take action to ensure food quality and service standards are met.
  • Verify temperatures, judge appearance and taste of products and check preparation methods to determine quality. Give guidance toward improvement and make necessary adjustments to ensure consistency.
  • Utilize computer and POS to accurately charge customers, create forecast and revenue reports and write correspondence. Input and retrieve data and change computer procedures.
  • Ensure that all standards and hotel cash handling procedures are met.
  • Maintain cleanliness and maintenance of IRD restaurant on a daily basis.
  • Solicit feedback from guests concerning the service and food & beverage offerings from IRD restaurant
  • Work closely with the Restaurant Manager IRD , Assistant Restaurant Manager IRD in monthly beverage inventory and china/glass/silver/linen inventory.
  • To efficiently administer and action the daily mail, guest report lists, staff schedules, leaves forms and other paperwork that is required and to ensure accurate notes are kept
  • Ensure all daily and monthly reports are detailed and submitted in a timely matter
  • Assist the restaurant manager IRD in Marketing privates dinners to ensure that all promotions and collateral updates are done in a timely matter.
  • Assist the Restaurant Manager IRD  in planning and setting up special events   
  • To proactively promote and exceed agreed GSQ score target.
  • To understand the need for training and development of all individuals and to take a proactive approach in training employees on their responsibilities regarding Fire and Bomb Safety, Health and Safety and Food Hygiene.
  • To follow up all setup/cleanliness and service of meeting room
  • On daily basis to follow up all venues (such as  salon and others) setup / service and other needs
  • To efficiently maintain cleanliness of POSEIDON bottle plant on daily basis and follow up bottles filling, recording all deliveries
  • Constantly  to have regular follow up of all colleagues behavior on job site, meal time, break time  and timely attendance.

About You:

The ideal candidate should have at least a school certificate/ diploma is Restaurant and Bar and be computer literate. The candidate should have at least 2 years of experience in the same role in an International Ultra-Luxury Resort and must be fluent in written and spoken English and French. Food Handler's Certificate is a must.
