To assist the Chief Steward in planning and coordinating the smooth and efficient operation of the Stewarding Department on a daily basis.
Customer Service
- Actively participates in and oversees the provision of excellent service to guests.
- Converses with guests, whenever possible and appropriate, to obtain feedback and suggestions for improvement.
- Handles customer complaints efficiently through appropriate interaction and/or referral to the Food and Beverages Manager and Chief Steward.
Logbook Updating
- Checks the daily attendance book to control punctuality, absenteeism, overtime and casual labour, in order to make sure Stewarding staff members have recorded their IN and OUT duty time.
- Checks the daily logbooks for recording events with the Stewarding section and review them with the Food and Beverages Manager and Chief Steward to correct any arising operational problem.
SOP Compliance and Quality Assurance
- Assists superiors in conducting frequent spot-checks within the Stewarding section to monitor compliance with established procedures, hygiene, storage and par stocks.
- Assists the Food and Beverages Manager and Chief Steward in implementing all SOP(s), as well as monitoring and ascertaining their professional execution.
Team Management
- Supervises activities of Stewarding staff and implements job allocations as instructed by superiors.
- Drafts monthly reports to track any overtime and attendance, and submits to superiors for approval.
SPECIFIC KITCHEN (STEWARDING) ACTIVITIES
Stock Management
- Assists the Food and Beverages Manager and the Chief Steward in the preparation and conduction of stock inventory on a monthly basis as per Finance Department guidelines, and in determining the minimum and maximum Stewarding par stock.
Storekeeping
- Supervises the distribution of supplies for every function as instructed by superiors.
Stewarding Duties
- Supervises the cleanliness of rack areas and helps coordinate the cleaning of restaurant areas.
- Ensures that the dishwashing machine is ready for operation before meals, and monitors the correct temperature for washing and rinsing.
