Supervise proper rotation aging and storage of all stocks of wines and spirits under his control and assists the Food & Beverage EAM/F&B Manager to establish proper wine lists to maintain profitable operations.
Create wine experiences by advising guests on wine and after dinner drinks choices while serving them with accuracy and flair.
- Responsible for assisting and ensuring that the beverage sales forecasted for the restaurant are met.
- Strive to meet target cost of sales and ensuring that all Team Members are aware of the targets in the department, including the monthly sales target.
- Budgeting.
- Take an active interest in the bar team and bar service integrating to become a flexible workforce to support at peak times.
- Conduct workshops for all Team Members to improve knowledge & liaise with suppliers to arrange frequent product knowledge training in both wine and spirits.
