JOB SUMMARY

The Arabic Chef is under the general guidance and supervision of the Executive Sous Chef and works within the requirements established by Constance Belle Mare Plage policies and procedures to enhance the customers experience and exceed guest expectations by overseeing and directing all aspects of the kitchen operations as required, especially with regards to the Indian/Mauritian corner of all outlets.

JOB DESCRIPTION

Duties and Responsibilities:

  • Provide functional assistance and direction to the kitchen operation as assigned.
  • Co-ordinate functions and activities with other Food and Beverage Department Heads.
  • Assist the Executive Sous Chef in supervising the functioning of all kitchen employees, facilities and costs to ensure maximum Food and Beverage department profit is achieved.
  • Assist the Executive Sous Chef in controlling and analyzing, on an on-going basis, the following:
    a. Quality levels of production and presentation in their respective areas.
    b. Guest satisfaction
    c. Cleanliness, sanitation, and hygiene.
    d. Ensures optimum performance in all of the above areas as assigned.
  • Assist the Executive Sous Chef in the production, preparation and presentation of all food items to ensure highest quality at all times.
  • Assist in maintaining effective employee relations.
  • Assist with Banqueting when required.
  • Assist the Executive Sous Chef in conducting formal and on-the-job training sessions for kitchen employees.
  • Assist the Executive Sous Chef in the completion of market lists in accordance with Constance Belle Mare plage quality and quantity standards. Checks perishable food items received for quantity and quality standards.
  • Inform on a daily basis the Executive Sous Chef of all relevant information in operational and personal matters, including information which does not require the Executive Chef’s action
  •  Assist the Executive Sous Chef with inspections of physical aspects of all kitchen areas, cold rooms and equipment.
  • Provide hands-on supervision and assistance in all Kitchen areas assigned by Chef.
  • Performs related duties and special projects as assigned.

 Specialized Operations

  • Assist in the in the preparation of Arabic authentic food dishes as per menu specifications and recipes.
  • Liaise with all Arab guests and inform Executive Chef and Executive Sous Chef about specific requirements and feedback.
  • Act as guest relation with the Arab guests
  • Participate actively in the yearly planner menu renewal and respects all deadlines accordingly
  • Follow the internal procedure and action plan for menu renewal
  • Participate proactively with the Executive Chef in the creation of new events
  • Organize and implement Chef’s Table and Indian Private Dinner as well as cooking lesson
  • Develop ideas and concept to attract Indian guests for lunch;
  • Train the team on all new technics, cooking processes and recipes; share a maximum of his knowledge with the team members;
  • Follow the high season and low season guidelines and contributes to the food cost control accordingly;

Candidate Profile

Qualification:
  • Middle or Secondary Education + Additional training or certificates in the relevant field is a
    plus.
  • Food handler certificate is mandatory.
Experience:
  • A minimum of 3 years of experience in hotel industry.
  • Proven experience working in a top luxury resorts is a plus.
  • Experience working in remote island locations is a plus.
  • At least 1 year of professional experience on a similar position is a plus.
Technical skills:
  • Effective communication, guest relations and leadership skills
  • Proven track of developing and implementing new menus
  • Exhibits a strong culinary talent in Arabic cuisine.
  • Guide menu purchasing and specifications.
  • Lead with new cooking techniques.
  • Knowledgeable in HACCP and Food Safety Management System.
  • Proactive, team player and ability to work under pressure.
  • Fluency in English or another language, written and verbal communication.
  • Knowledge of a second language is a plus
