Strong focus will be menu development, food costings and the creation of new dishes. Ongoing duties will include quality control and ensuring the right level of food standards are kept throughout the complex.
Ensure that all company policies, procedures & SOPs are adhered to
Ensure that the preparation, cooking & preparation of all meals are per company standard
Ensure that all pastries & desserts are of highest quality & continually stay abreast of trends
Comply with standards of service & assist in assuring the same from all kitchen staff
Assist in any other section of kitchen where required
Controlling costs
Ensure smooth running in absence of Chef de Partie
Stay abreast of new trends
Ensure that work areas are always kept clean
Overseeing that all food items are prepared on time to quality standards
Ensure that all kitchen staff consistently adhere to uniform, grooming and health & safety standards as per HACCP
To continually maintain the highest standards of hygiene within the property
