The Food Hygiene Coordinator guarantees the respect of HACCP Norms and food safety. He/She provides an internal expertise for any issue related to Health and Safety of the food, accompanies and train the teams in mastering health and safety of the food.
GENERAL MISSIONS:
SET UP OF HEALTH AND SAFETY FOOD POLICY:
- Design and implement the HACCP plan established in accordance with European regulations & local standards and adapted to the products and processes used in villages (with the help of managers of concerned departments).
- Follow and control the regulatory compliance, functional compliance or implementation compliance of food-related products, processes, facilities and equipment.
- Remind teams of the good uses of health and safety practices in their job and check their application.
- Identify and analyze dysfunctions and non-compliances, analyze the causes, define correctives actions and implement them with the concerned actors.
- Depending on the severity and frequency of issues, alert the department and division manager, and/or chief of village
- Alert in case of health crisis in village, take care of action plan until the closing of the crisis unit. Archive the record of actions taken and prepare the necessary reports.
- Control the reception of raw materials (meats, fish, BOF…) and advise corrections and actions to apply in case of non-compliance.
- Control the respect of health and safety rules of food, from the purchase of raw materials to the service of meals in the restaurant and drinks at the bar.
- Check the control of temperature during the cold and hot preparations.
- Perform regular audits in the kitchen in order to control the application and respect of HACCP requirements plans.
- Ensure monitoring of the pests control plan by the Executive Housekeeper according to the requirements defined in the HACCP plan
- Ensure good waste management in the service (sorting, collection…)
- Ensure good management of dangerous products in the service (storage, protection equipment…)
- Limit electricity and water consumption
Ideal Profil:
- Diploma related to Food & Hygiene
- Sensitivity to teaching methods
- Easy public expression
- A successful first experience in training would be a plus
- Ok to commmute between the resorts (Albion & La Pointe Aux Canonniers) in Mauritius
- Fluent English & French
