Reporting directly to the Kitchen chef, the Junior Sous-chef can fill in the Kitchen chef when needed and help in resolving issues concerning job.
SPARC, a subsidiary of Casela Ltd, is the largest multisport complex on Mauritius’ idyllic west coast. Located in the heart of Uniciti smart city, it provides a wide range of health, fitness, sports and leisure experiences.
We are currently looking for a Junior Sous-Chef.
DUTIES AND RESPOSIBILITIES:
- Make sure kitchen is up to safety standards and staffs are obeying sanitation rules
- Address any complaints which affect kitchen staff and resolve those issues
- Dealing with customer complaints
- Calculate purchase order costs
- Ordering supplies and food
- Long term planning issues
- Make inventory
- Help with menu planning
- Planning and directing food preparation in kitchen
- During peak hours, quick decision will be needed and meals should be prepared on time
- Keep all stations clean and prepare foods without short cuts
- Staff scheduling
- Responsible for training and supervision of staff
QUALIFICATIONS:
- A diploma from a culinary school is highly preferred
- 5 - 6 years experience in kitchen operation and staff supervision
REQUIRED SKILLS:
- Know all types of cooking, including French, Italian and fusion.
- Be creative and dedicated
- Delegate responsibilities to staff
- Good communications skills
- Basic knowledge of Public Health and Sanitation regulations and procedures.
- Able to work under pressure
