The Assistant Chief Steward supports the Chief Steward in managing the stewarding department to ensure high standards of cleanliness, hygiene, and safety across kitchen and back-of-house operations. The role ensures compliance with hotel policies, hygiene standards, and operational efficiency.

 

What you’ll do:

•Assist in supervising daily stewarding operations and staff scheduling

•Ensure cleanliness and sanitation of kitchens, storage areas, and back-of-house facilities

•Monitor proper use, storage, and maintenance of kitchen equipment and utensils

•Ensure compliance with food safety, hygiene, and HACCP standards

•Conduct regular inspections and hygiene audits of kitchen and BOH areas

•Support dishwashing and waste-management operations

•Coordinate with Executive Chef and F&B team on operational requirements

•Assist in training stewarding staff on hygiene, safety, and cleaning procedures

•Monitor inventory of cleaning supplies and equipment; raise purchase requests when required

•Ensure proper chemical handling and MSDS compliance

•Support pest-control coordination and follow-up actions

•Assist in cost control, breakage control, and loss prevention

•Handle staff discipline, attendance monitoring, and performance support

•Ensure adherence to health, safety, and environmental regulations

•Assist during banquets, events, and peak operational periods

•Act on behalf of the Chief Steward in their absence

What We’re Looking For:

•HSC or Vocational Certificate

•Previous experience in stewarding or kitchen operations

•Good knowledge of hygiene, sanitation, and safety standards

•Strong organizational and supervisory skills

•Ability to work shifts, weekends, and public holidays
