Overview of the Role πŸ”
To oversee and assist in all kitchen operations in accordance with the hotel's standard operating procedures (SOPs), ensuring high standards of food quality, hygiene, and team performance.
Key Responsibilities πŸ“‹
Team Management & Development
β€’ Lead and supervise the kitchen team, ensuring high performance and discipline.
β€’ Conduct recruitment, training, and performance appraisals in coordination with HR.
β€’ Identify training needs and implement development plans.
β€’ Foster a positive work environment, promoting safety, grooming standards, and team welfare.
Operational Oversight
β€’ Oversee daily kitchen operations in line with SOPs and quality standards.
β€’ Ensure compliance with hygiene, safety, and food handling regulations.
β€’ Maintain smooth coordination between kitchen and service teams.
β€’ Handle guest feedback and complaints with appropriate follow-up.
Menu & Culinary Standards
β€’ Develop and implement menus, ensuring accuracy of costing and technical sheets.
β€’ Monitor food quality and consistency, considering guest dietary needs and preferences.
β€’ Lead menu engineering efforts to optimize profitability and popularity of items.
Sustainability & Safety
β€’ Promote and enforce energy-saving and eco-friendly practices.
β€’ Ensure adherence to Safety & Hygiene (S&H) standards and Quality Management Systems.
β€’ Comply with all the sustainability commitments and practices implemented within business units.
β€’ Notify the Sustainable Development Department of any matters that may pose any impact to the environment and society.
Financial & Budget Control
β€’ Manage kitchen budgets (CAPEX & OPEX), ensuring cost-efficiency and profitability.
β€’ Monitor food and labour costs and implement effective cost-control measures.
β€’ Collaborate with F&B and Management teams on promotions and sales strategies.
Ideal Candidate Profile 🎯
β€’ Degree in Hospitality, Tourism Management, or other relevant qualifications
β€’ A strong combination of academic background, relevant experience, and career achievements is essential.
β€’ Minimum of 8 years’ experience in the hospitality industry.
β€’ Proficient in computer systems, including hotel management software (e.g., Opera, Micros, WINHMS).
β€’ Fluent in both English and French, spoken and written.
β€’ Knowledge of a third language is an advantage.
