The Cost Controller is responsible for analyzing the costs of the Hotel, for preparing various reports and for outlining cost factors.

 

Key Duties and Responsibilities

  • Prepare monthly food & beverage forecasts and cost report.
  • Assist to monitor Food & Beverage expenses, costs in all Food & Beverage outlets through analysis of daily sales, purchases, requisitions, and consumption.
  • Produces a daily food cost report and identifies menu costing and control issues in the absence of Head Cost Controller.
  • Review ticket voids, promotions and other Food & Beverage activities to ensure proper controls are in place.
  • Performs other duties as requested by the Head Cost Controller.
  • Audit of all menu prices in micros with the actual printed menu for all outlets.
  • Carry out monthly inventory in all outlets and Cost centers.

 About you

The desired qualification for this role is at least a Higher School Certificate. The ideal candidate should have at least 2 years of experience in the same role in an international ultra-luxury resort and must be fluent in written and spoken English and French. The candidate should have the knowledge of Food & Beverage outlet operations including food, beverages, and inventory controls. The candidate must have the ability to analyze a large volume of complex financial information from many sources and create reports, forecasts and projections.
