JOB DESCRIPTION:
• Full responsibility of the sushi station with regards to the planning, preparation, set up, and execution of food items.
• Maintains standards of quality, service and facilities in all areas over which he/she has responsibility and authority.
RESPONSIBILITIES:
• Responsible for the production and have knowledge and competency of all products on menu.
• We expect that every guest in the restaurant receives a good quality product and that the back of house is kept clean at all times
• That, with his/her friendly and courteous attitude, he/she supports and maintains the good reputation of the restaurant
• To follow standard recipes as directed by the Head Chef in order to ensure consistency of all food
• To make sure that the restaurant’s guidelines, standards and procedures are followed
• To maintain good communication between restaurant and kitchen
• To be part of a disciplined, well harmonizing team, especially in view of: Strict following of closing and opening check lists, cleaning check lists, stock control, procurement, deliveries and storage, food cost management
• That with ideas and suggestions he/she contributes to a continuous improvement of the entire operation
• Controls costs by: Maintaining adequate inventory of food, Utilising food surpluses, Portion control, Wastage monitoring
• To be very familiar with local food hygiene
• To implement and enforce all policies, procedures and standards set by the corporate office, including but not limited to kitchen standards, to grooming, telephone etiquette, accounting policies and human resources policies.
• Performs special duties and projects as assigned by the manager
