The Assistant Food & Beverage Manager supports the strategic and day-to-day leadership of the resort’s F&B operations to ensure an exceptional guest experience that reflects the property’s brand standards.
The role contributes to operational excellence, team development, financial performance, and quality assurance across all restaurants, bars, banqueting, and in-room dining services.
What you’ll do:
Operational Leadership.
- Assist in overseeing the smooth functioning of all F&B outlets, ensuring consistent service delivery aligned with resort standards.
- Support menu planning, product selection, and service concepts in collaboration with the Executive Chef and F&B Manager.
- Monitor daily operations, conduct walk-throughs, and ensure readiness, cleanliness, and compliance across all areas.
- Address guest requests and concerns promptly, ensuring personalised and memorable guest interactions.
- Ensure strict adherence to hygiene, food safety, and sanitation standards (HACCP).
Team Management & Development
- Supervise, guide, and coach F&B supervisors, and frontline team members.
- Participate in recruitment, onboarding, and performance appraisals.
- Foster a culture of continuous learning, professionalism, and teamwork.
- Plan and coordinate training sessions focused on service excellence, product knowledge, and safety compliance.
Financial Performance & Cost Control
- Assist in monitoring revenue performance, cost of sales, payroll, and operational expenses.
- Support inventory management, waste control, and stock rotation procedures.
- Contribute to budgeting, forecasting, and action planning to achieve financial targets.
- Ensure efficient use of resources and identify opportunities to improve profitability.
Guest Experience & Quality Assurance
- Uphold the resort’s service philosophy, ensuring high levels of guest satisfaction across all outlets.
- Conduct regular service audits, guest feedback reviews, and implement corrective actions where necessary.
- Support guest engagement initiatives, themed dining experiences, and F&B promotions.
- Ensure all service touchpoints meet the resort’s brand expectations in terms of ambiance, presentation, and attentiveness.
Administration & Compliance
- Oversee scheduling, payroll inputs, checklists, SOP implementation, and reporting requirements.
- Support the maintenance of equipment, operating supplies, and furniture standards.
- Ensure compliance with licensing requirements, health and safety regulations, and internal policies.
- Assist with preparation of monthly departmental reports and performance reviews.
What We’re Looking For:
- Diploma or degree in Hospitality Management or related field.
- Minimum 3–5 years’ experience in Food & Beverage operations, with at least 2 years in a supervisory or assistant managerial role in an upscale hotel or resort environment.
- Strong leadership, communication, and guest service skills.
- Solid understanding of F&B trends, service standards, and cost-control techniques.
- Proficiency in POS systems, MS Office, and hotel management systems.
- Ability to work flexible hours, including weekends and public holidays.
