Job Description

JOB PURPOSE:

The Beverage Manager is responsible for overseeing all beverage operations to ensure exceptional service quality, profitability, and guest satisfaction. This role focuses on managing stock levels, controlling costs, and maintaining high standards of hygiene, safety, and legal compliance. The Beverage Manager drives revenue growth by analyzing sales performance, applying menu engineering techniques, and promoting high-margin products. The role also involves designing innovative beverage menus that balance quality, variety, and profitability while enhancing the overall guest experience. Position is available to local candidates only.

MAIN DUTIES & RESPONSIBILITIES:

Operational Excellence

Oversee daily operations of all beverage outlets, ensuring smooth and guest-focused service.
Define and maintain beverage service standards aligned with the brand identity.
Conduct regular quality checks and ensure compliance with hygiene, safety, and licensing regulations.
Develop signature cocktails and maintain a comprehensive beverage standards manual.

Crafting Exceptional Beverage Experiences

Design and update beverage menus, including cocktails, wines, beers, and non-alcoholic options.
Align beverage offerings with brand positioning and guest preferences.
Ensure consistency in flavour, presentation, and quality while integrating seasonal and market trends.
Develop sustainable, zero-waste cocktail concepts.

Stock, Cost Management & Control

Manage inventory, purchasing, and supplier coordination to ensure product availability and cost efficiency.
Monitor par stock levels and conduct daily stock verification.
Implement strict beverage control systems to minimize wastage and maximize profitability.
Ensure all sales are accurately recorded through POS systems with full accountability.
Analyze sales performance, cost ratios, and trends to support business decisions.
Apply menu engineering principles to optimize beverage and wine menus.
Standardize recipes and control high-cost items.
Conduct regular audits and provide feedback, training, and corrective actions.
 People Leadership
Lead, motivate, and develop the beverage team to deliver professional and engaging service.
Provide continuous training in mixology, product knowledge, and upselling techniques.
Support talent development, succession planning, and career growth initiatives.
Implement structured development plans for team members.

Guest Engagement

Create memorable and personalised guest experiences through beverage offerings.
Handle guest feedback professionally and drive continuous improvement.
Organise events such as tastings, activations, and cocktail classes.
Deliver interactive and engaging guest experiences.
Collaboration & Partnerships
Build strong relationships with suppliers and beverage partners.
Collaborate with F&B, Culinary, Events, Finance, and Marketing teams to enhance overall operations.
