Job Description
We are seeking a passionate and skilled butcher to
play a vital role in delivering top-quality meat products to our esteemed
clients and guests.
As a butcher in the tourism and travel industry,
you will have the unique opportunity to showcase your craftsmanship and

experiences.
MAIN DUTIES & RESPONSIBILITIES
· Takes
care of daily food preparation and duties assigned by the superiors to meet the
standard and the quality set by
the Restaurant.
· Follows
the instructions and recommendations from the immediate superiors to complete
the daily tasks.
· Coordinates
daily tasks with the Sous Chef.
· Able
to estimate the daily production needs and checking the quality of raw and
cooked food products to ensure that standards are met.
· Sharpen
and adjust cutting equipment.
· Receive,
inspect, and store meat upon delivery.
· Cut,
bone, or grind pieces of meat.
· Weigh,
wrap, and display cuts of meat.
· Cut
or prepare meats to specification or customer’s orders.
· Store
meats in refrigerators or freezers at the required temperature.
· Keep
inventory of meat sales and order meat supplies.
· Clean
equipment and work areas to maintain health and sanitation standards.
· Prepares
all food products according to the prescribed methods.
· Maintains
the highest level of food quality available.
· Receives
and stores all products as prescribed.
· Ensure
that the production, preparation and presentation of food are of the highest
quality at all times.
· Ensure
highest levels of guest satisfaction, quality, operating and food costs on
an ongoing basis.
· Full
awareness of all menu items, their recipes, methods of production and
presentation standards.
· Follows
good preservation standards for the proper handling of all food products at the
right temperature.
· Checks
periodically expiry dates and proper storage of food items in the section.
· Consults
daily with Sous Chef and Executive chef on the daily requirements, functions
and also about any last minute events.
· Daily
feedback collection and reporting of issues as they arise.
· Establishing
and maintaining effective inter-departmental working relationships.
· Record
food spoilage and communicate to the Chefs.
· Responsible
to maintain food logs.
· Verify
that all equipment in the kitchen are kept clean and in proper working
condition and report any equipment in need of repairs and maintenance to the
Sous Chef.
· Always
follow proper food safety and hygiene practices and procedures as well as SOPs.
· Monitor
inventory levels.
· Check
on portion control to maintain product quality and quantity.
· Participate
in training as and when required.
· Ascertain
that the floor is always kept dry and clean to avoid slip/fall accidents.
CRITERIA
· Experience
working in hospitality & travel industry.
· Excellent
culinary catering talent.
· Food
Production Certificate.
· Fluent
in written and spoken English and French.
· Knowledge
of various cooking techniques, procedures and food handling.
· Innovative,
proactive, reliable and punctual with a strong work ethic.
· Creative
in terms of quality and food presentation.
· Strong
attention to detail and organizational skills.
· Good
communication and teamwork skills.
· Physical
stamina to stand for long periods and lift heavy items.
· Ability
to handle kitchen equipment safely.
· Valid
Food Handlers’ Certificate.
· Food safety
certification is a plus.
· Ability
to work various shifts, including weekends and public holidays.
