About the Role
Amari by Vineet, the signature
Indian restaurant at LUX* Belle Mare, is seeking a passionate and talented Chef
de Partie to join our culinary team. Working alongside experienced chefs,
you will be responsible for managing your assigned kitchen section while
ensuring exceptional food quality, consistency, creativity, and presentation
that reflects the standards of a luxury dining experience.
Key
Responsibilities
- Manage and oversee the daily operations of
your assigned kitchen section.
- Prepare, cook, and present dishes in
accordance with established recipes and presentation standards.
- Ensure consistency, quality, and timely
delivery of all menu items.
- Maintain the highest standards of food
hygiene, sanitation, and safety (HACCP).
- Monitor stock levels and communicate
requisition requirements to the Sous Chef.
- Minimise food wastage and contribute to
effective cost control.
- Ensure proper storage, labelling, and
rotation of food products.
- Maintain a clean, organised, and safe
working environment.
- Work collaboratively with the kitchen and
service teams to deliver an exceptional guest experience.
Requirements
- National Certificate in Food Production or
an equivalent culinary qualification.
- Minimum of 3 years' experience as a Chef
de Partie or Demi Chef de Partie in a luxury hotel or fine dining
restaurant.
- Experience in Indian or Asian cuisine, particularly with a
tandoor oven, will be a strong advantage.
- Sound knowledge of food safety, hygiene,
and HACCP standards.
- Valid Food Handler's Certificate.
- Passion for culinary excellence and
attention to detail.
- Flexible to work shifts, weekends, and
public holidays.
- Good command of English; French will be an
advantage.
