LUX* Resorts & Hotels is hiring the position of Speciality Chef for LUX* Grand Gaube, Mauritius.
 
Every memorable dining experience at LUX* Grand Gaube begins behind the scenes with our Teams’ commitment to always strive to provide an exceptional culinary experience to our Guests.
 
As Speciality Chef, you will lead and guide a dynamic team of 8 Team Members whilst engaging and inspiring them to create a truly spectacular dining experience.

Our Restaurant, INTI, will feature modern Peruvian and Argentinian cuisine, a cultural blend of many different ethnicities including Spanish, Japanese, Chinese and Mediterranean.

Open for dinner only and having a capacity of 40 covers, the outlet will offer also the following:
  • A Pastry Bar where the Chef will be preparing all sweet and savory churros as well as desserts
  • A Chef Table, a communal table which can welcome up to 12 Guests
  • A Ceviche, Tiradito & Pisco Bar
  • A garden dining zone

QUALIFICATIONS
  • Professional culinary qualifications at Diploma or degree level from a reputable educational institution

PREVIOUS PERFORMANCE
  • A minimum of 3 years of working experience at senior management level the culinary department with well renowned hospitality brands.
  • Robust working experience as a Speciality Chef displaying strong knowledge of modern South American (Peruvian, Brazilian, Ecuadorian, Argentinian) and Japanese cuisine.
  • Solid experience in the pre-opening of resorts will be a definite advantage.
  • Working experience in a high end South American restaurant in a major European city or Dubai will be an advantage.

  • Detail-oriented with excellent organisational skills, performing work accurately and efficiently.
  • Ability to develop, implement and maintain systems.
  • Excellent command of Food & Beverages Service Management.
  • Ability to effectively train and develop Team Members and build team morale.
  • Valid food handler’s certificate.
  • Good written and spoken communication skills in English and Spanish languages.
