Plan and co-ordinate the smooth and efficient operation of the Stewarding section on a daily basis as per SOPs
- Assist the HRM in conducting selection and recruitment of TM
- Assist the Executive Chef to carry out Performance Appraisal and to identify necessary training measures
- Keep his superior informed about all unusual matters concerning any plans affecting his/her area
- Act as a coach
- Communicate to Executive Chef the training needs of the TM and conducts on the job training
- Ensure that discipline prevails within the team and communicates any disciplinary issues to Executive Chef / HR Manager
- Promote and maintains effective interpersonal relations
- Ensure that set ups and requirements are done as per events orders
- Ensure that all delivered material are in perfect conditions and impeccably cleaned
- Prepare monthly rosters of TM whilst ensuring a proper manning during each shift
- Monitor leaves in respective outlet
- Manage the outlet’s budget efficiently and effectively
- Control of expenses (Breakages, linen, materials, etc.)
- Monitor the outlet’s operation equipment
- Conduct monthly inventory on materials used in the outlet / Villas
- Check and approves stores requisitions whilst ensuring par stock at the Outlet are maintained
- Submit at the end of each month breakage reports to Executive Chef
- Ensure respective TMs are operating as per Quality Management System
- Ensure respective TMs are operating as per S&H regulations and policies
- Conduct daily stewarding meetings and attend daily kitchen / F&B briefing
- Plan and organise daily requested activities in collaboration with all concerned
- Ensure that the correct detergents are being used in the right volumes in pot wash and the areas of manual dish washing
- Ensure that all other surfaces including light fittings are clean regularly
- Ensure that all kitchen equipment is cleaned thoroughly immediately after use
- Ensure that dish washers and glass washes are operating to maximum efficiency and serviced periodically
- Ensure that waste for collection is stored in the prescribed containers/garbage room and kept under strict hygiene conditions
- Ensure that waste is collected regularly from all areas
- Inspect set ups, including service station before the opening/ensure that guests’ requests are properly followed
