• Performs and manages butchering tasks
• Conversant with Management, Storage and Ageing of meat
• Conversant with Yield management & Portioning of meat cuts
• Conversant with charcuterie production
• Ensure that quality and quantity of meat preparation meet established standards and specifications;
• Ensures high standards of cleanliness and hygiene in work environment.
• Works with Kitchen and restaurant team on menus and menu development
PROFILE & EXPERIENCE
• Passionate about steak
• Proper qualification in the related field
• At least five years in a similar position or any equivalent combination of qualification and experience in the catering and tourism industry.
• Dynamic and motivated individual.
• Organised and able to work independently and in a team.
• Any equivalent combination of education and experience.
